For Serious Cereal Lovers

Well, everyone is back to school. What an exhausting summer! Although we did not do nearly as much traveling as I would have liked due to my condition, now 30 weeks pregnant, I was able to enjoy time with my girls. And they enjoyed being able to sleep in and eat a leisurely breakfast before noon. Now that school has started, there is about 10 minutes to grab breakfast on the way out the door. Well, everyone loves cereal and my family is no different. With a side of fruit, cereal makes an excellent, nutritious breakfast each morning. There are a number of great breakfast cereals that are gluten free. My husband loves the Natures Path Honey’d Cornflakes. I personally enjoy the Arrowhead Mills Gluten free flakes, such as their Maple Buckwheat Flakes. My kids enjoy the General Mills Chex line of cereals with four different flavors that are now gluten free: Rice, Corn, Honey Nut and Cinnamon flavor. We also like the Nature’s Path EnviroKids Cereals, however our choices are limited due to our soy and chocolate allergies. One kind of cereal that we do miss is peanut butter cereals. Back in our ‘gluten days’ my husband and I could polish off a whole box of Reese’s Puff’s cereal or Mother’s Peanut Butter Bumpers. Unfortunately, the gluten free peanut butter cereals that are available today all contain soy ingredients. Again, when we cannot get what we want in the stores, it always inspires me to head to the kitchen and make my own recipe. So I thought about it and mixed a little of this and a little of that. We are now on our fourth batch of Mom’s Homemade Peanut Butter Cereal. This recipe is outstanding. It tastes great dry, yet holds up in milk quite nicely. You might be able to enjoy the cereals you fine in the store, but if you are looking for something different, I recommend making this for your family. It is sure to be a crowd pleaser.

Mom’s Homemade Peanut Butter Cereal

Ingredients
9 cups of Rice Chex or Gorilla Munch Cereal
1 Tb butter
½ cup Organic Natural Peanut Butter
1 T vanilla
2/3 cup powdered sugar

Directions
In a large pot, melt butter and peanut butter
Add vanilla
Once melted completely, stir in 9 cups of cereal until completely coated
Place mixture in large storage container
Add powdered sugar, cover container with lid, and shake well
In my house this lasts about week!
